A little culture

Quite unknown in France and relatively rare in Europe, pure fennel honey should not be confused with honey with fennel perfume: the latter does not come from the fennel flower! But it remains interesting in taste for lovers of the taste and characteristics of fennel seed, slightly aniseed. To make a flavoured honey, infuse 10 grams of crushed fennel seeds in 100 ml of boiling water for 20 minutes (extra). Filter, incorporate the infusion to 400g acacia honey in a water bath. Then place in a sterilised jar, keep for up to 1 year away from light and humidity.

Some cooks are big fans of the taste given by fennel pollen in certain foods and use it as spice with powerful liquorice, artisanal marshmallow and slightly lemony flavours. One more reason to plant this plant with honey flowers in your garden!
